3 Ingredient Gnocchi Recipe
I’ve been exploring more plant-based recipes, and with potatoes being such a staple in my household, and always seemingly lying about in strange hidden places around the fridge - why not use them in a new and exciting way?
All you need is:
1 large potato
4 tbsp olive oil
1/3 cup plain white flour
Peel your potato! Then boil your potato until soft. Once soft, mash. Take your mash and place in another bowl and mix in your flour & two tablespoons on olive oil. Once formed into a dough, roll out to form about a 1 inch thick log. Cut the log into 1 x 1 inch pieces (they will look like little pillows of potato). Once cut, add the other olive oil to a pan on medium heat and place your pillows into the heated oil. Brown all around and then stir in your chosen sauce! Lastly… enjoy!
