Baked peaches with creamy burrata
Baked peaches with creamy burrata, salty prosciutto in a one-tray-wonder perfect for pleasing 🍑
Ingredients:
4 ripe peaches
2 packs of prosciutto
2 balls of burrata
1 tsp cracked pepper
¼ cup olive oil + a tbsp for drizzling
A few sprigs of thyme
Salt to taste
How to:
De-pit and chop your peaches into bite sized pieces (tongue twister wooo!) and pop in a baking dish. Pour over your olive oil and toss until completely coated. If any excess oil, dab with paper towel, or too little, add a swish more. Pop in a preheated oven at 180C fan for about 10-15 minutes until soft and sweet as can be. Leave for a few minutes once out of the oven until dish cools slightly and then make little prosciutto roses (get rid of any fat) and pop it in between the peach pieces, fill any other gaps with burrata, pulled apart and creamy in bite sized pieces, add thyme (mostly for decor but you sprinkle some leaves, too) and then dash of olive oil, pepper and salt to finish.
If you’re like me, grab a fork and eat straight from the tray, but if you’re sharing, small plates or grilled bread work very well! Safe to say I’m addicted to cooked fruit at the moment... next up.. JAM! Just kidding but.. maybe? Ha
