Buttery chicken, green beans, sweet cranberry sauce
Buttery chicken, green beans, sweet cranberry sauce and the most perfect Idahoan Foods mash!
It’s been full on Christmas vibes in our house, so I put together a Christmas dinner for two (with a few fun swap outs) to make it easy to celebrate early this year!
Ingredients:
1 small whole chicken
200g fine green beans
250g lightly salted butter
1 pinch of salt
3 sprigs of rosemary
3 sprigs of thyme
1 bunch of sage leaves
1 pinch of pepper
1 packet of Idahoan Foods Perfect Buttery Mash
4 strips of streaky bacon
10 mini chipolata sausages
Preheat your oven to 195c fan. Prepare your chicken by separating the skin on the breast from the meat, and stuff two 25g pieces of butter inside. Take 150g butter and massage it all over the top of the skin of the chicken until completely covered in butter. Take your rosemary, thyme and sage and place all over the chicken on all exposed areas (breast, thighs, legs). Add a pinch of salt over the chicken. For a small chicken, in the oven for about 1hr 15-25min should be perfect so pop in a deep oven dish, covered, into the oven and set your timer so that it goes off 25 minutes before the chicken is done. Cut your bacon into 3 inch sections, wrapping around your sausages. Once the timer goes off, pop your sausages in the oven. Uncover & baste chicken, set another timer for 15mins. Once the 15min has passed, switch your oven to fan and broil so as to get the colour on the top of the chicken. While your chicken cooks for the last 10ish mins, toss your green beans and 25g butter in a pan on a medium heat until bright in colour. Make your super easy Idahoan Perfect Buttery Mash. Once your oven food is ready, serve and add your remaining butter to melt over your mash!
My top tips for serving:
* Never forget cranberry sauce
* To keep colour in your greens, fry them or blanche them lightly
* For ease and less stress, use Idahoan mash
* Sprinkle your mash with some chopped spring onion, ground pepper or some extra melted butter
* When feeding a smaller group of people, opt for chicken or fillets over a whole turkey (also more budget friendly)
