Caramelized onion, whipped goat cheese crostinis

Ingredients (makes about 12 crostinis):
1 red onion, sliced
160g soft goat cheese
25ml cream (I used @oatly)
1 pinch salt
2 tbsp olive oil
+ smoked salmon or gravlax (as much as you'd like) and 1 baguette
Heat a pan on a medium to low heat and add your oil. Add your onions and a pinch of salt in and cook until golden and caramelised (25-30mins). In the meantime, whip your goat cheese with cream in your chopper or food processor (I use a @russellhobbsuk chopper) and whip until creamy and has a cream cheese like texture. Cut smoked salmon into bite baguette size slices. Slice your baguette. Once onions are almost ready, toast your baguette, then spread whipped goat cheese, add smoked salmon and top with caramelized onions!
I used a goat cheese with an ash rind so I removed it and saved it to have on its own, but you could blend it in, too. Sweet and smokey, and creamy - this is so easy and delicious!
