Cheesy, buttery asparagus wraps with mozzarella & herby Italian seasoning!
Super easy for a weekday lunch, dinner or packed lunch item as once cooled these tasty savory treats can be easily popped into a container and saved in the fridge or freezer!
Ingredients
1 puff pastry roll
18 asparagus tips
1 cup shredded mozzarella cheese
1 large tbsp Italian herb seasoning
¼ cup milk or whisked egg (for “egg washing”)
1. Preheat your oven to 190C fan.
2. Unroll your pastry sheet and cut into 6 squares (you may have excess so save in the fridge for another day)
3. Layer about 1 tbsp mozzarella cheese and 3 asparagus tips onto each square at a diagonal so that the tips are pointing toward a corner rather than in the middle. You can add a sprinkle of seasoning inside, too, if you want.
4. Fold the left corner of the square over the asparagus, wrapping it and then fold the other corner over, pressing gently so that pastry sticks.
5. Brush with either milk or egg lightly and sprinkle Italian herb seasoning generously on top.
6. Bake until golden brown and fluffy, around 20 minutes!
Serve with a marinara tomato sauce, or Josh had his with ketchup. I had mine on their glorious own and I think they were hovered up in about 2 minutes flat 🙈 With the excess pastry, I made some mini pizza pockets, but you can also twist and bake into buttery twists, or add cheese in, too. Perfect for a vegetarian, meatless meal, or for kiddies who may be a bit picky.
