Seriously loaded chocolate strawberry bread pudding
Ingredients: (serves 4)
2 cups of brioche bread (cubed and lightly toasted for 3-5 mins in the oven or in a pan)
¼ cup coconut or brown sugar
4 tbsp Menier cocoa powder
100g Menier milk chocolate drops
1 tbsp vanilla (optional)
½ cup whole milk
½ cup double cream
1 egg
Topping:
20g dried strawberry, chopped
1 Menier chocolate bar
75ml cream, room temp
2 fresh strawberries, cut into hearts - and more for serving
Mix all of your ingredients (not the topping ingredients or cubed bread) together in a bowl until completely combined, then add in your bread and stir up so that the bread is completely coated in all the chocolatey goodness. Place in a shallow dish(es) and into the fridge to absorb for at least an hour. Then preheat the oven to 175c fan and bake for about 40 minutes or until all the liquid has been absorbed and cooked. The chocolate may bubble, but that’s totally fine! Just before you take your puddings out of the oven, in a small pan, heat your Menier chocolate bar (broken up into pieces) & just before all the chocolate is melted, remove from heat and stir in the cream until it’s well combined and ready to drizzle. Drizzle generously all over your bread puddings and sprinkle dried strawberry over the top. Add your two heart cut strawberries (and pop more chopped strawberries in a bowl for serving).
You can even make these ahead to take the pressure off of the actual day, and pop them in the fridge or even freezer. Then just pop into the oven to reheat.
