Coconut panko popcorn shrimp
Nigella Lawson, you are an easy recipe goddess! She enticed me on Saturday to make her coconut panko fried shrimp that was one of the simplest and most delicious, juicy and uniquely flavored recipes I’ve tried at home - and gotten right on the first try. 🥳
The coconut and panko compliment each other so well, alongside the cayenne pepper thrown into the mix! I paired this with a little gem lettuce, avocado & tomato salad that I love to make in the summer that literally takes 5 minutes and is ALWAYS a winner🥇
🍤POPCORN SHRIMP INGREDIENTS🍤
2 packages peeled raw shrimp (about 300g)
2 cups rice flour
1 box panko crumbs
1.5 cups desiccated coconut
2 eggs
1 tbsp salt
1 tbsp cayenne pepper
2-3 cups rapeseed oil
🥣 sauce🥣
1 cup coconut yoghurt
1 tsp garlic powder
1 tsp cayenne pepper or paprika
and mix together and let sit while you cook
🥗 AVO SALAD INGREDIENTS 🥗 (for 2 people)
1 baby gem lettuce, cut into one inch pieces
10-15 cherry tomatoes cut in half or quartered
1 whole avocado cut into small squares
1 tsp salt (taste as you go)
Shake some pepper (as you like)
