Creamy mascarpone, cherry tomato, sweetcorn + caramelised onion spaghetti
Best pasta dish ever? It’s definitely up there. Been working on this little brainchild of a recipe and I can wholeheartedly say I absolutely love it. The salty parma ham on top with the bursts of cherry tomatoes are perfection. Did someone say caramelised onions? YES! Those are in there, too. All my ingredients are from Farmdrop!
Ingredients:
Spaghetti (as much as you’d like)
250g Cherry tomatoes
1 red onion, sliced
2 sweetcorn cobs cooked, corn cut off of cob
1 bunch basil
5-7 slices Parma ham
250g mascarpone
3 tbsp tomato paste
pinch salt
Add a dash of oil into your pan and fry your parma ham until crispy. Leave to the side. In the same pan, add your sliced onions and caramelise (around 30 min on a low heat). Boil salted water and cook pasta as directed on the packet until al dente. Once onions are caramelised, add your tomato paste, mascarpone, cherry tomatoes, pinch of salt and stir together on a low heat and stir until cheese is melted. Cherry tomatoes should start to soften, so pop them gently on the back of your spoon. When the pasta is ready, stir the sweet corn into the sauce and then add the pasta directly from the pot. Add 2-3 splashes of pasta water (and keep some in case you want to reheat the dish). Stir together and serve with crushed crispy parma ham and torn basil on top!
