Creamy pesto pasta with roasted trout & broccoli
Ingredients: (serves 2)
@pastaioamano pasta (any kind you like)
½ head broc, chopped into florettes
2 trout fillets
1 tbsp Italian herb seasoning (I used @peakblends )
1 large tbsp pesto
125ml cream (I used vegan cream)
+ salt & olive oil
Preheat oven to 200c fan. Assemble broc & trout on a tray. Drizzle of olive oil over everything. Rub Italian herb mix over the trout so it is fully covered and sprinkle salt over broc. Pop in oven for 10-12 mins depending on how big your fillets are. Boil your pasta with salty water and drain. Once drained, set pasta aside with a dash of olive oil, then add cream and pesto with a pinch of salt into the pot where the pasta was cooked. Stir together and heat on a low heat. When trout & broc are ready - Assemble plate with pasta, broc, trout and pesto cream sauce! Yum!
