Grilled garlic prawns - dadtakesfoodpics style!
Whenever I head home to California, going grocery shopping together and getting the grill fired up is one of the first things Dad & I do together. We both share a love of cooking - and often have a beer and grill dinner outside and watch the sunset. Although I won’t be back home with him (yet) this Father’s Day, I asked him if he could tell me how he makes his grilled prawn skewers -- and who knew it was so simple! I’ve paired them here with some crispy potatoes & chilli mayo, but back home, we’d probably have asparagus! I grilled these skewers up on my George Foreman Smokeless Grill - safe to say, I’m obsessed.
Ingredients for prawns: (serves 2)
15 large king prawns (shell on)
4 cloves garlic, minced or chopped finely
1 pinch smoked salt (optional)
+ olive oil (dad says you can also add dried oregano)
Ingredients for potatoes: (serves 2)
1 large baking potato
1 pinch salt
1 pinch pepper
1 tsp smoked paprika
+ olive oil & chilli mayo to serve
Heat your grill. Peel & de-vein the shrimp, leaving just the tail on. You can also use peeled & cleaned prawns without the tail, but they look really lovely when you leave them on. Simply marinade with a dash of olive oil, salt & garlic while you prep & cook your potatoes. I tossed these in salt, pepper & smoked paprika and air fried for 15 mins. When the potatoes are a few mins from done, skewer the prawns and pop them on the grill for just 1-2 mins until opaque but still juicy (be careful to check as they can overcook quickly). Serve with chopped parsley and chilli mayo!
