Grilled halloumi and watermelon, basil and spinach salad
I use my George Foreman Medium Fit Grill for this recipe!
Ingredients:
400g watermelon, cubed
1 halloumi, cubed
2 cups baby spinach
½ red onion, sliced
1 small handful fresh basil (+ 1 tsp chopped)
½ red chilli
½ green chilli
2 tbsp honey
1 tsp dried oregano
½ lemon, juice
+ olive oil for grilling & pomegranate molasses for drizzling, and some toasted pitas
salt and pepper if you like!
Heat up your grill while you prep the halloumi and watermelon. Toss your halloumi cubes in honey, a little olive oil and oregano. Drizzle a dash of olive oil onto your watermelon. Once the grill is hot, add your melon and halloumi. Close the grill and leave for 10-12 minutes. While your watermelon and halloumi are grilling, toss your spinach, basil leaves, and red onion in lemon juice and a little olive oil. Plate up and sprinkle the chillis on top. Once the halloumi and watermelon are showing dark grill marks (after about 10-12 mins) and the halloumi is lovely & soft on the inside, just serve on top of your salad. Drizzle pomegranate molasses & your chopped basil over the top and dig in while it’s hot! If you don’t have a George Foreman grill, I’d recommend nabbing one. They come in handy so much and make grilling so easy. You can use a grill or frying pan for the halloumi and watermelon, but you’ll need to flip it halfway through the cooking time.
