Grilled scallops & asparagus with soy honey sauce!
Quick and easy recipes that impress are my favourite and this is totally one of them. Simply delicious. You can do as many or as little as you like, and increase the sauce to match. This below is based on 5 scallops (only 3 shown I know 🙈 yum - I had already eaten them)!
You’ll need...
5 fresh scallops (from the fishmonger if possible)
5-8 chunky seasonal green asparagus (or a bunch
2 tbsp honey
2 tbsp soy sauce
1 teeeeeeny pinch of salt
2 tbsp olive oil
Heat your grill (I’m using my @georgeforemanuk grill) but you could use a grill pan, a frying pan, a BBQ. Brush scallops & asparagus in olive oil. Pop asparagus on grill first for about 4 minutes (with the lid down if using a GF grill) and then when that’s done, lift the lid and grill the scallops for a couple mins each side until they start to break apart and the middles are firm but still jiggly (lol). If you get sashimi grade (I think I did @lifeof.fishtooting can you confirm? 🙈) then you can probably cook for as long or little as you like. Simply mix honey and soy sauce in a bowl. Pour on as much as you like, and then just GO FOR IT. I stood at the counter and ate this because I didn’t want to sit down for it. So good.
Get asparagus while it’s in season, it’s 100% one of my fav veg and this is the best time of the year for it. Perfect pairing, I think so!
