Are healthy muffins even a thing? YES! ...well healthier muffins — no added sugar. These were just what the (muffin) doctor ordered as we had some very ripe bananas and lots of desiccated coconut to be used up! 🍌

Ingredients:
½ cup buckwheat flour
1¼ cup white flour
1½ tsp baking powder
3-4 very ripe brown bananas (depending on size)
½ cup coconut oil
1/3 cup honey
2 tbsp halva (or a few more)
1 egg
1 tsp vanilla extract
¾ cup desiccated coconut


Preheat your oven to 190 celcius fan, grease (with coconut oil) your muffin tin. Add together the flour, baking powder and shredded coconut, then mash in another bowl together the banana, coconut oil, honey, egg and vanilla. You can either add a dollop or halva to the mix OR save to use as topping. Mix wet and dry ingredients and then divide evenly in your muffin tin, only filling each cup about ½ way. Then take a little more desiccated coconut to add on top! Bake for 20 minutes and make sure that the muffins are fully cooked before you take them out to cool. Drizzle or lather with your halva for ultimate decadence, I saved mine as topping! It was the best snack and treat for a couple of days. You can also freeze the batter for a later use!
