Hot dogs with sweet caramelised onion & cornichons!! 🌭
I love hot dogs, they remind me of being in high school and us all borrowing each other’s Dodgers sweatshirts and hats to have a different outfit to wear to the games each time. We’d sit in the outfield, partially because the tickets were cheaper, but also because food is included and you still have a good view (and a chance of catching the ball) ✨ We can’t get dodger dogs over here in the UK but these are tastier and still look pretty darn close to what I’d have back home!
Ingredients:
6 hot dogs (or 3 long ones)
2 large yellow onions, sliced
3 tbsp olive oil
1 tsp brown sugar
6 cornichons (small), sliced
3-6 hot dog buns (depending on your hot dog size)
Ketchup
Mustard

How to:
Add your olive oil to a large pan on a low heat. Toss in your sliced onion and cook on a low heat, stirring frequently, for between 30 and 40 minutes or until golden, brown, and sweet. Just as the onions are turning color, you can stir in your brown sugar but this is totally optional.
I chose to use organic hotdogs and they only required about five minutes in the frying pan. I used the frying pan that I cooked the onions in for some extra flavour. Cook your hotdogs as instructed on the package! Once the hotdogs are ready, slice your buns open and pop a hotdog inside each one, top with sliced cornichons (pickles), ketchup, and mustard. I served mine with salt and vinegar crisps on the side! But you can serve them with fries or on their own, all up to you! 🍟
