Italian seasoned salmon
Italian seasoned salmon with a crisp white wine in my favourite kitchen corner!
My go-to dinners for easy, low-key evenings are always fish, vegetables and wine. I’ve been loving natural wines or English wines lately, going for organic where I can, too. We tried a Georgian wine last night, but my favourites I always come back to seem to be from warmer climates like New Zealand, with my fav being a buttery chardonnay from Babylonstoren. Sometimes when I’m cooking, I take a step back and think about how much happens in this little corner of my kitchen, it’s where I relax, where I work and where I have built my business (a lot of my photos and videos are taken here), and although we thought about moving a little while back (and I was convinced we needed to), now that we have decided to stay here for a while longer, I can’t believe I was thinking about ditching my cozy, comfortable and creative corner.
Ingredients for my go-to oven roasted salmon:
2 salmon fillets
1 tbsp italian herb seasoning (I use Peak Blends, it’s honestly fantastic)
1 pinch of salt
1 pinch of garlic granules
1 tbsp olive oil or butter (for both pieces of salmon)
For sides, I usually go for a simple olive oil & garlic granules tossed with salt, pepper and broccoli florets and grains (like spelt or barley cooked in veg stock).
Cover the salmon in italian herb, salt, garlic and oil or butter. If using butter, just pop a couple of cubes on the top. Preheat your oven to 200c fan, and line a baking sheet. The salmon & broc can go in at the same time, cook for 10-12 minutes until the salmon flakes gently.
You can also do red peppers, and serve in a better of lettuce, or swap salmon for a while fish, too! Timings are often similar.
