One-tray oven roast with Tesco Jersey Royal New Potatoes
ne-tray oven roast with Tesco Jersey Royal New Potatoes 🥔 and free-range crispy skin chicken thighs! 🍖
You'll need:
1 bag of Tesco Jersey Royal New Potatoes, halved
4 skin on chicken thighs
½ cup chicken broth (I used a chicken stock cube and hot water),
1 small onion, sliced
1 tsp paprika
1 tsp garlic powder
1 tsp oregano
4 tbsp olive oil
75g butter (sliced into 4 pieces)
Start by preheating your oven to 190c fan. Then separate the skin on the chicken, not taking it off, just pull it apart from the meat, so that you can pop your butter slices inside, nice and cozy. Then layer the bottom of your baking dish with your sliced onions. In a separate bowl, add your potatoes and your chicken thighs. Pour over olive oil and add all spices. Combine until everything is completely oiled up and spiced up. Pop your stock cube in a a bowl and boil your kettle with ½ cup of water. Once boiled, pour over stock cube and whisk until stock has completely dissolved. Lay your chicken and potatoes in your baking dish making sure that the potatoes surround the chicken as best as possible so we can get the skin nice and crispy. Pour the stock around the chicken. Pop your dish into the oven for approximately 50-55 minutes (time may vary depending on the size of your chicken). If you want the skin extra crispy at the end, switch to grill for a few minutes after your timer goes off and keep an eye to make sure they don't burn.
