Gooey mozzarella & pesto stuffed chicken!
I’ve been wanting to create a stuffed chicken recipe, and what better than with one of my favourite sauces -- pesto! The Medium Fit Grill from @georgeforemanuk that I use for this recipe is amazing as it’s non-stick, which is key as it means that all the cheesy goodness makes it to your plate, as well as being a quick and easy meal that is ready in about 5 minutes!
Ingredients:
2 chicken breasts
1 tin of tomatoes (crushed or whole)
1/2 cup of mozzarella, sliced into stick shapes (easy to stuff)
2 large tbsp pesto (see my homemade pesto recipe for this, or use storebought)
1-2 tbsp italian herb seasoning (of your choice)
1 small bunch of basil leaves, torn
+ 1 tbsp oil, 2 pinch of salt & 1 pinch pepper
Heat your grill. While it heats, slice your chicken breasts carefully making pockets with them. Stuff with your mozzarella sticks, and 1 tbsp pesto in each, too. Once stuffed, coat in italian herb seasoning, salt and pepper and brush with oil. Place both pieces of chicken on the grill and close the lid. While the chicken cooks, pour your tinned tomatoes into a bowl and sprinkle with 1 pinch of salt and stir together. When the chicken is ready (about 5-6 minutes), plate it on top of your tomatoes, and sprinkle basil over the top. Dig in straight away for some seriously gooey, stringy, cheesy action!
