I swear, once you know how to make a pie, you’ll want to make them all the time! 😍

This pot pie recipe is inspired by my mom because it was one of her staple dishes we would have when growing up! I always go kind of off-recipe when I’m cooking a pie because you can kinda toss in whatever you’d like! Frozen veggies included, and I usually end up purchasing a @jus_rol sheet instead of making the crust from scratch. A note: you definitely need 2 @jus_rol pastry sheets in order to do a top AND bottom crust. I love the bottom and the top crust both, but often here I’ve found that the pie has no bottom 🙈

For the filling here, you can either buy cooked chicken or boil 2-3 chicken breasts in chicken broth.
For the saucy filling, I melt about 4 tablespoons (a big chunk!) of butter in a pan, adding in a chopped yellow onion and stirring until the onion turns clear, then I slowly add in pinches of flour (about ¼ cup in total) and 1/2 cup of cream (@oatly cream for me) or a bit more if you need, until the roux thickens. Once it’s thick and perfectly creamy, I add in the cooked chicken (shredded up), frozen peas, sliced mushrooms and boiled potatoes (if you’re adding the boiled potato, you can cook in same pot with the chicken). Then once the peas are soft, you can turn off the heat, let cool a little and pour into your pie dish and cover with your @jus_rol pastry crust! Then brush with either milk or egg on top lightly and pop into the preheated @ 180c fan oven until the top starts to brown and the inside is hot! If you’re struggling to brown the top, you can turn on your grill for a few minutes, but keep an eye on the crust.


Fun tip from my mom is that you can also use a cream of chicken soup can or two to make the sauce, too, if you’re a bit more strapped for time! 💫
