Fresh lemon & mint whipped feta & ricotta toasts
It’s #toasttuesday isn’t it? And I’m 100% here for warm toast with creamy feta and ricotta on top. This rain is literally calling for cosy food.
Ingredients for whipped feta & ricotta:
120g feta
250g ricotta
½ lemon, juice
2 glugs olive oil
3 tbsp mint, chopped
1-2 tbsp fancy olive oil (for serving)
+ lemon zest & extra fresh mint for sprinkling on top
(Serving size is: a good bowl of dip for sharing)
Add your feta, ricotta, and ½ olive oil into your chopper or blender. Blitz for a minute or two until combined. Add in your other ½ olive oil, lemon juice and chopped mint. Blend until smooth and combined. Serve in a bowl with your fancy olive oil, lemon zest and mint leaves sprinkled on top or spread generously on some thickly sliced sourdough, toasted with olive oil!
