Sweet balsamic and olive oil marinated ripe cherry tomatoes

Sweet balsamic and olive oil marinated ripe cherry tomatoes with salt, pepper and a sprig of basil!

Ingredients:
1/2 punnet cherry tomatoes, halved
Splash of olive oil
Good dash of balsamic vinegar
1 pinch salt
1 pinch pepper
1 sprig basil or small bunch leaves chopped finely

How to:
Simply pop your cherry tomatoes in a bowl, add olive oil, balsamic, salt and pepper and be sure to leave at room temp to marinate for at least 5+ mins. The secret to the tomatoes absorbing all the juicy goodness (I learned from @thedaleyplate when she shared her marinated tomatoes is to make sure however you are marinating you’re tomatoes, that you leave them for enough time or they won’t take on the flavours). I like to either add a sprig of basil afterward or add finely chopped in and stir up! I even add chopped garlic sometimes, but prefer to roast the garlic to serve with it. It’s perfect on a cream cheese toast, with burrata or on its own!

I seriously cannot cope with the heat today and I thought it was going to rain after hearing about 30minutes of thunder... nothing happened.. Again, I perused @argoshome to buy a fan (they do same day delivery) and somehow I didn’t press purchase as Josh’s “why give in now when the temp will drop” kept ringing over and over in my head. I ate 2 pizzas (one healthier... kinda) and endless tomatoes, had a prosecco at lunch and have drunk my weight in water (although I’m still feeling exhausted)... I think a 16 minute nap will be in order tomorrow after meeting my friend for an early coffee although I’m very much looking forward to an iced cold drink and good company. 💕
