Sweet, fluffy scones filled with Sunmaid raisins
Sweet, fluffy scones filled with Sunmaid raisins and a healthy mix of milled nuts and flax seed! Healthy scones? Let’s call them that because I want to eat the whole batch in one sitting 😍
Ingredients:
350g self-raising flour and more for rolling
¼ tsp salt
1 tsp baking powder
85g butter
3 tbsp caster sugar
175ml oat milk, left out to be room temp
1 tsp vanilla extract
1 tsp lemon juice
5 tbsp @sunmaiduk raisins
2 very large heaping tbsp @linwoodshealthfoods mulled nuts & flax
1 egg, beaten to glaze
Heat oven to fan 200c and add flour into a large bowl with salt and baking powder, then mix together with the butter, and it will be very crumbly, crumb-like texture and add in the caster sugar. Add the oat milk, at room temperature. Add vanilla extract and lemon juice. Heat a baking tray with baking paper in the oven for a few minutes. Make a well in the dry mix, then add the liquid and combine it quickly. Put the extra flour onto the counter and put the dough on it, fold the dough over 2-3 times until it’s a little smoother. Pat into a round about 3-4cm deep. Take a cookie cutter or a glass and plunge into the dough, then repeat until you have enough scones to the amount of dough. Keep rolling and flattening the dough until you’ve used it all. Brush the tops with a beaten egg, then carefully place onto the baking tray. Bake for 10 mins until risen and golden on the top. Eat them warm with some butter or clotted cream and a cup of tea!
