Sweet grilled halloumi & veg skewers
Delicious simplicity. These flavours altogether just totally work. The sweetness of the honey and tomatoes with sharp onion, charred peppers, supple courgette, and salty cheese are like an explosion of flavours in your mouth. I just bought more halloumi because once I make these, I get hooked and want them all week ๐ so definitely recommend buying more than 1 halloumi!
Ingredients:
-Makes 10, so about 2-4 servings-
10-15 cherry tomatoes
1 medium courgette
1 bell pepper (red/yellow/orange)
1 large red onion
1 halloumi cheese
Olive oil
Honey
Fresh dill
Cube all your veg and cheese, keeping your cherry tomatoes whole. Skewer them all in a fun and colourful order on your skewers (I recommend re-useable, washable metal ones). Heat your grill pan. Iโm using a George Foreman grill (ad brand partner) which has been one of my favourite things to cook with since last lockdown as we donโt have a cute garden. You can also pan fry or pan grill on a medium to high heat! Lather generously with olive oil and honey, using a brush get into all the crevices. Then with the brush, lightly brush the pan or grill you are using with the excess oil and honey mixture from the plate you prepped on/drizzled over. Grill for about 5 mins, turning the skewers to make sure each side of the skewer gets some pan time. Once the halloumi is looking golden on the outside and soft and squidgy on the inside and the veg is starting to char, remove quickly and serve with fresh dill.
You can serve on their own, or alongside some couscous, olives and toasted bread and balsamic!
