Sweet potato katsu curry bites

The Tokyo Closing Ceremony is on Sunday, so I thought it fitting to make something delicious from Japan. I’m a huge Japanese food lover, and have been trying to get a quick & easy katsu curry down and this is the one. Paired with no-fry sweet potato bites and it’s delicious for snacking, or even an appetiser/side for a main meal! I got all of my ingredients on Farmdrop!

Katsu sauce:
½ onion
2 carrots
2 garlic cloves
olive oil 1- 2 tbsp

1 tbsp miso paste
1/2 tbsp curry powder
1 tsp turmeric
½ tsp ginger powder
1 tbsp soy sauce
1 chicken stock cube whisked into hot water (100-150ml water)

Simmer the first 4 ingredients on the list until onions are soft, then stir through the rest. Add a dash more water if too thick and then summer for another 15-20 mins until the carrots are softened. Then simply just blend together (I use my chopper for a chunkier sauce).

Sweet potato bites:
2 sweet potatoes sliced 1 cm thick
½ cup flour
2 eggs
1 cup panko

Preheat oven to 200c fan. Coat each slice in flour, then egg, then panko. Pop in the oven for about 30-45 mins (flip halfway through) and enjoy while hot dunked into the katsu! ENJOY!
