Vegan gnocchi lasagne with hidden veg!! 🍅
Is it gnocchi lasagne or just a gnocchi bake? I don’t know, but I declare it lasagne - it’s layered! Recipe below ♥️ Plus, this one is 100% vegan, but pop to my stories as today was a 2-4-1 and I made two different gnocchi lasagne, one vegan and one non-vegan!
Ingredients: (serves 2)
3 tbsp olive oil
2 carrots, chopped finely
2 celery sticks, chopped finely
½ large yellow onion, chopped
1 head of garlic, chopped
250g gnocchi (I used Dececco)
2 tbsp pomodoro sauce
ÂĽ cup to â…“ cup passata
80-100g vegan cheese (I used Violife)
1 pinch of salt
1 tsp Italian herb seasoning (or dried oregano, garlic powder, dried basil)

In a large pan on a medium heat, add your olive oil and onion. Sweat your onions until clear and then add in your garlic.. Stir together for a few minutes, and then add in your pomodoro sauce, passata, celery and carrot, stir and then simmer until veg have softened. Once softened, remove from heat. In a pot, boil water with salt. Add in gnocchi until floating (depends on brand used, but usually a few minutes). Then drain gnocchi and in your casserole dish, lay your gnocchi as the base layer. Sprinkle with cheese and then some Italian seasoning. Cover the layer with your tomato & veg sauce and then add the rest of your cheese and seasoning on top to finish it off. Pop in the oven for about 10-15 minutes or until cheese on top is melting and the food is piping hot through. Either serve carefully in your dish (will be hot) or in two bowls with a leaf or two of basil on top.
Josh and I had this for lunch, and are about to have the second half of each (vegan and non-vegan) for dinner, too. I’m feeling a little funky today, but someone told me it could be written in the stars, so out of my control completely. I’m 100% running with that one (even though going to bed at 1am and staying up working the past couple of nights until like 11pm probably is my own doing…. But I love it!!!).
