15 MIN GARLIC COCONUT SHRIMP LETTUCE CUPS WITH STIR FRY VEG & RICE NOODLES 🥬
I’ve been loving trying recipes inspired by chefs and classes I’ve been to, and this one is exactly that! From my knife skills class with @ellieskitchenuk I’ve been super inspired to try more Asian cuisine and put my chopping skills to good use!
This super simple recipe was inspired by some rice paper shrimp wraps we made in the class, and I’ve essentially take them and made them without being wrapped and added stir fry veggies with some shrimp to add that extra level of JUICY! 🥕
Ingredients:
- 🍚 1 pack rice noodles (cooked or uncooked work, just follow the package heating instructions)
- 🦐 2 packs of uncooked de-shelled/cleaned shrimp
- 🥦 stir fry vegetable mix 1 bag (@sainsburys)
- 🥬 1 head of lettuce - 🥥 coconut oil - soy sauce
- honey
- 2 chopped garlic cloves
- few green onions, julienned *check out my stories for what this means*
- 🔥 sweet chili sauce always optional but yummy for dunking

The how-to will be in my stories if you want to play chef like I do, come cook along with meeeee otherwise the how-to will also be in the recipes highlight of my page and the recipe is at the end of me chatting your ear off if you want to screenshot 👩🏼🍳 This is one of the most fun and super easy recipes, only takes about 15 mins including prep (minus the hours I take browsing the grocery store aisles or debating whether organic or save money or if the lettuce is the right shape), and the best thing is that all the leftovers that you don’t use (because I only used half of the veggie bag and half of the noodles) you can eat the next day in a regular stir fry! 🌈 so innovative, I know 😜 let me know what you think and hope you enjoy🍴
