30 min meal: Creamed sweetcorn and chorizo
💥30-MINUTE (or less) CREAMED SWEETCORN + CHORIZO 💥⠀⠀⠀⠀⠀⠀⠀⠀⠀

Although summer is coming to an end, sweet-corn has definitely had its fair share of fame through the warmer months - even had a whole spread in @waitrose magazine! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

This was one of the recipes featured, which is garlicky, sweet, creamy and delicious and can be easily cooked up at home for a balanced and easy weeknight dinner 💪🏼⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g cooking chorizo ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5 corn on the cob⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 (or however you like) garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
30g unsalted butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
2tbsp oat creme fraiche⠀⠀⠀⠀⠀⠀⠀⠀⠀
300g spinach⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp extra virgin olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

Recipe:⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 190*C (fan oven). Place the chorizo on a baking tray and roast in the oven for 15 minutes, turn over halfway through. Use a knife to cut all the corn from the cobs and cook the kernels in a pot of boiling water until 12-15 mins, until soft, then drain and place in blender with garlic, butter, and creme fraiche. This should be blended until creamy. Saute spinach with olive oil in a pan for about 2-3 minutes. Pour the creamed corn onto your plates, add the spinach and slice and add the chorizo! Add some chilli flakes if you like to add a little spice.⠀⠀⠀⠀⠀⠀⠀⠀⠀
