Easy crispy skin Sunday roast chicken
Veggies and vegans, look away - I'm sorry I had to do this to you, but it was too tasty to keep for myself, and we are back with a recipe post - YAY! 🥳🥳🥳⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
With a little Googling last Sunday afternoon, I found the ideal roast chicken recipe, that came out gorgeous and crispy skinned, and soft and succulent on the inside. So juicy! 🙈⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⬇️ Ingredients (serves 2):⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 small whole chicken⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 sprigs of rosemary, 2 de-stemmed and chopped, 1 whole⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 stick of butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 smashed garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp dried thyme⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 slice of lemon (optional)⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⬇️ How to:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Preheat oven to 190 degrees.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Place garlic, 1 whole rosemary sprig and 1 hefty tbsp butter inside cavity of chicken (+ lemon if you like)⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Slightly melt rest of butter (can be done in your hands) and rub entire chicken exterior, all over until butter is thoroughly covering all skin. If any chunks, or a bit chunky, you can leave to melt when the chicken is in the oven.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Sprinkle chopped rosemary and thyme on top of chicken (all over)⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Place chicken on foil sheet on baking tray and place in the oven for 20 minutes to cook on 190.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. After 20 minutes passes, lower to 170 and cook for 45 minutes or until juices run clear. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
7. Carve up and enjoy! I like mine with mushroom stuffing, mashed potatoes, leeks and carrots!⠀⠀⠀⠀⠀⠀⠀⠀⠀
