Turkish eggs
Finally trying my hand at some Turkish eggs — but plot twist, in the microwave!
Before I went freelance, I always used to make eggs in the microwave at work, and I have no idea why I’ve never tried it before at home. I used the Morphy Richard’s Mico Multi Pot to make things simple and easy. It has a little mould to keep the eggs (you can make two!!) in place. I’m so happy with how my first try at Turkish eggs came out although I’m still perfecting my perfect yolk! Are you a runny, jammy or fully cooked kind of person?
Below is my Turkish eggs recipe which was delicious and SO easy, but I’ve also popped into my stories a tasty way to cook potatoes with the Mico Multi Pot, too!
Ingredients:
1 cup of greek yogurt
1 tbsp chopped dill
1 garlic clove, crushed
4 tbsp olive oil
1 heaped tsp paprika
1 egg (or two… how hungry are you?)
½ orange pepper, sliced
Handful of greens of your choice (I’ve gone with mixed salad)
½ avocado sliced
1 slice of wholemeal seeded bread
First stir your garlic clove and dill into your greek yogurt, then set to the side. Mix 3 tbsp olive oil with your paprika until combined and also set to the side. Then crack your egg(s) into the Mico Multi Pot and cover. Pop into the microwave for about 3 mins (may be less or longer depending on your microwave). Once your timer goes off, take the egg(s) out and pop into your bowl or plate. Remove the crushed garlic from the yogurt and swirl your yogurt around and lightly over the egg. Toast your bread and cut into triangles (or how you prefer to eat). Arrange your avocado, greens and sliced pepper and then drizzle your paprika olive oil on top!
The cleanup was minimal because it’s non-stick, which makes Josh happy and it’s a perfect new method for me to cook using my microwave — happy all around. Have you tried Turkish eggs yet?
