Wild Atlantic prawn cocktail baguette
Perfect picnic weather for a wild Atlantic prawn cocktail baguette with organic baby gem lettuce and sliced ripe avocado π₯ sprinkled with smoky paprika and a squeeze of lemon to top it off!
Ingredients:
1 cup of defrosted Wild Atlantic Prawns
1 short baguette, cut in half lengthways
1 head of organic baby gem lettuce
Β½ a ripe avocado, sliced thinly
1 heaping tbsp of mayonnaise
1 tsp ketchup
1 pinch of salt & pepper
1 pinch paprika
1 lemon, sliced in half
Simply mix your defrosted prawns, mayo, ketchup, salt and pepper together with a small squeeze of lemon juice in a bowl. Lay your lettuce leaves on half your baguette, add avocado slices on top, then your prawn cocktail, sprinkle with paprika on top and either eat open faced or close the sandwich to enjoy! You can also just eat as prawn cocktail lettuce cups, too. Perfect for on your lunch break or pop into a container and build upon arrival at your picnic βοΈ Everything is to taste, so if youβre a huge mayo fan, have more mayo, although too much ketchup can be overpowering. These prawns are so versatile and are pre-peeled and cooked for ease of use!
