Quick and easy roasted asparagus
Quick and easy roasted asparagus in extra virgin olive oil and a dash of salt, topped with crispy red onion! 🧅
This is my vegan version of crispy streaky American bacon on top of asparagus. It’s just as delicious and even less messy (and less meaty) to make. We had a similar variation tonight but with practically every veg you can think of (including some veggies from the garden) and feta on top — just keep in mind that root veg will take about 3x as long as the asparagus so if you’re baking them, make sure you add in the asparagus later on. I’m having a beer tonight in the garden and spending the rest of the evening binge watching Downton Abbey because I just finished season 1 and I’m OBSESSED! Any Downton fans here? I’m a little late to the game...
Preheat oven to 180c fan and toss your asparagus and onion slices in evoo, pop in the oven for about 14mins until onions and asparagus tips crisp. Serve by crumbling the blackened onion over the top. Eat hot!
