Asparagus goat cheese and tomato tart
Feeling fresh and summery, I decided to dive in and create a recipe for something simple and easy - and with 4 of my favorite foods: puff pastry, asparagus, tomatoes and goats cheese!
Ingredients:
2 packs of soft goat cheese
1 @jus_rol puff pastry
2 packs (around 16) asparagus
10-12 cherry tomatoes (any colour)
2 dashes of olive oil
1 dash of salt
Squeeze of lemon juice (bottled or fresh)
How to:
(Pre-heat oven to 180 fan)
1. Take puff pastry out of fridge 10 minutes before use and let sit
2. Unroll puff pastry onto a baking sheet on an oven tray
3. Score around the outside to create a line for the crust and then score the inside so it looks crossed out (this stops it from rising too much)
4. Dash a little olive oil all over the pastry rolled out and make sure completely covered in a very thin layer
5. Spread goats cheese generously all over the pastry up to the edge where you have scored the crust to be
6. In a bowl, put the asparagus and a dash of olive oil, make sure there is a thin layer on all of the asparagus
7. Lay each asparagus out (nice and gently) onto the goats cheese layer
8. Chop your cherry tomatoes in half and place them around the asparagus on your tart (it should start to look pretty now)
9. Sprinkle your dash of salt
10. Squeeze your lemon (juice) lightly over the tart
11. Admire and then place into your preheated oven with a timer set to check at 20 minutes and likely leave in until crust is golden at 23-25 mins
