Balsamic strawberry, cream cheese & parma ham crostinis!
Strawberries have come into their prime now, and are juicy, vibrant and full of flavour and they are not just for sweet desserts or serving with cream. Marinated in some balsamic vinegar and sugar, this sweet and savoury crostini is perfect for picnic-ing, hosting or just sharing at home! Strawberries are also a great source of vitamin c and antioxidants which are good for heart health.
Ingredients:
100g strawberries
1 tbsp balsamic vinegar 1 tsp caster sugar ground black pepper 16 crostini toasts
75g cream cheese
75g Parma ham
few chives to garnish
Clean the strawberries, remove the hulls and thickly slice. Place them in a small bowl. Sprinkle over the balsamic vinegar and sugar. Allow to marinate for 1 hour at room temperature then season with black pepper. Arrange the crostinis on a large serving plate. Top each with a little cream cheese, then a slice of parma ham. Place a marinated strawberry half on top and garnish with chives. I opted to go without black pepper as I wanted these sweet as can be, but the black pepper adds a lovely bit of spice.
