Mozzarella, basil, and summer fruit salad with pesto dressing
This summer fruit and mozzarella salad works so well, topped with fresh chopped basil and a light pesto dressing! I grilled up all my fruit in one go on my George Foreman Smokeless Grill which is amazing for a quick grill-up inside - and it’s minimal clean up, too - take out the grill plates, pop them in the dishwasher and ta da - that’s it!
Ingredients:
150g mozzarella balls
15 small strawberries
280g mango, cubed
½ honeydew melon, balls
1 handful chopped fresh basil
1 tbsp pesto + 4 tbsp olive oil (for the dressing)
& optional is to add a pinch of salt and some finely chopped red onion, too
Simply heat your grill up. Grab your melon scooper (or a measuring spoon or teaspoon works, too) and scoop your melon into balls. Cube mango (or buy pre-cubed), cut the tops off your strawberries and pop straight onto your hot grill for just a minute or two until it’s hot but still firm (keep an eye on it, this grill works fast). When the fruit is hot, pop it into your serving bowl, add your mozzarella balls, chopped basil, a pinch of salt (if you like) and pour over your dressing. Toss together and serve!
