Black bean, sun-dried tomato & onion balls with spaghetti marinara! π
Ingredients: (6-8 balls)
1 tin black beans, rinsed
1 whole yellow onion
5 sun-dried tomatoes
3-4 tbsp tomato paste
1 tsp garlic powder
3 tsp Italian seasoning
Olive oil
Sea salt to taste
Pasta + your favourite tomato sauce
Preheat your oven to 200c fan. Add your black beans, onion, sun-dried tomato, tomato paste, garlic powder, and Italian seasoning into your chopper/blender and pulse until finely chopped and squidgy. Add in olive oil as you go to loosen it so that it doesnβt get stuck, but not too much (probably 3-5 tbsp in total max). Then form into balls (about 6 to 8) pop a little olive oil over them with a brush or your fingers gently and place into the oven. After about 15 minutes, check them ever few minutes until they start to firm and they will be ready after about 20-25 minutes. They may look like they need a little olive oil so just brush a little more over the tops. Serve with a sprinkle of Italian herb and mix with your pasta and tomato sauce! They are very moist and squishy, so handle carefully but they should maintain their shape when transferred to plate. β₯οΈ
