Spicy & smoky tofu stir fry with mixed veg! 🥦🥕🌶

I always keep some frozen vegetables or stir fry veg in the freezer for those kinds of days where something comforting, warm and with a little kick is all I want for breakfast (yeah, I said it), lunch AND dinner! Let’s be real, frozen veg is great. I do wish I had my own allotment to go pick my veg for dinner, but I don’t — so let’s get creative and make a super easy, delicious and warming tofu stir fry!

You’ll need:
170g brown rice noodles (2 servings, I used King Soba Kingbrown rice, pumpkin & ginger noodles)
1 block (200g) Taifun Tofu smoked tofu (or a very firm tofu), chopped into 1 inch cubes
1 bag of frozen stir fry veg
60ml soy sauce
4 tbsp sesame oil
2 tsp ginger powder
2 tbsp maple syrup
2 tsp brown rice vinegar (or any rice vinegar)
Veg oil for frying
Sesame seeds + chopped chilli for topping

First add your wok (or large frying pan) on the stove and put on a medium to high heat. Add in a small drizzle of oil and add in your veg straight from the freezer. Reduce to a medium heat. At the same time, cook your noodles to cook as directed on package - these ones take 4-5 mins. As the veg softens, which should be a few minutes, continue to stir. Mix your soy sauce, sesame oil, ginger, maple syrup and rice vinegar together in a jug and pour over the stir fry. Stir in your tofu, too. Once your noodles are ready and drained, toss them into the wok and mix everything together well. Serve quickly before your veg wilts and softens too much - but make sure it’s cooked through and hot - and sprinkle on your sesame seeds and chilli! Dig in right away!
