Black seed honey grilled halloumi with tomatoes & herb butter baguette
Ingredients:
1 halloumi (about 200g)
4 tbsp Bubble black seed honey (or honey mixed with crushed nigella seeds, coriander seeds, urfa chilli flakes)
2 tbsp olive oil
½ baguette
75g butter + a little olive oil if needed
20g fresh parsley, finely chopped
20g fresh coriander, finely chopped
15g fresh dill, finely chopped
1 clove garlic, minced
10-15 cherry tomatoes (on vine if possible)
Heat your grill. Cut halloumi in half and then into quarters (4 slices about 1cm thick). Lather halloumi in the Bubala black seed honey and olive oil. In a chopper or in a bowl, mix your butter with your fresh herbs and garlic until well combined. Should be quite green! Spread onto slices of your baguette. I’ve cut mine in half and then sliced rather than normal round slices. Spread your herb butter onto the baguette and toast in your oven on the grill setting on 170c until golden on the edges (or in toaster or toaster oven). Pop your halloumi & tomatoes on the grill (I’m using my George Foreman- another option is to fry in a pan but I prefer grilling). For about 5 minutes or until halloumi stats to blacken and brown and the tomatoes skin is bursting! Serve with toast then halloumi and tomatoes.
This feels like such a gourmet lunch or light dinner, but it’s so easy to make. I’d highly recommend purchasing as it’s such a great way to level up your halloumi (or even just drizzle on toast!!). Farmdrop has a great selection of Bubala products that I need to continue to try. I’ve had their Ras el Hanout, but saw they have some Labneh, hummus and other spices to try! (ad brand partner but not an ad, just fell in love with these products!)
