Creamy ‘nduja clams with spaghetti
’ve been eating shellfish since I was little, and my curiosity really sparked while I first moved to London on my own and travelled back and forth to Europe on the weekends with the sole purpose of finding delicious food. ‘Nduja is a traditional Italian smoked spicy sausage that comes in a paste-like form and brings so much flavour to shellfish dishes (and more)! Now I’m cooking with it myself! I love Italian cooking and family eating culture, and find the family aspect of Italian cooking can be found in similar ways in my own heritage, so sharing big bowls of pasta makes my heart warm and right now, especially reminds me of being with my family.
Ingredients: (serves 2)
450g clams, cleaned
2 healed tbsp ‘nduja
1 clove garlic, minced
125ml cream (I used Oatly)
2 tbsp olive oil
20ml (or 1 shot if ya feel in’ feisty) vodka
+ few sprigs parsley, chopped & spaghetti for 2
How to:
Pop your oil in your pan on a medium to low heat, add in your ‘nduja. Break apart and then add in your minced garlic and stir together. Add vodka, stir while bubbling and pour in cream. Pop your pasta on about now and cook as directed on package. Let bubble and then add in your clams. Cover and steam for 7 minutes. Give the pan a shimmy if the clams need a little help opening up. Once all are open, remove any that are still shut. Either pour clams/sauce over pasta in a large dish, or stir in your pasta to your clams/sauce pan! Sprinkle parsley and dig in straightaway!
