Brie & jam pastry bites
These are so perfect for this holiday season, and also a great option any time of year as an appetizer or with some lunch.
Ingredients:
450g brie, cubed
6 tbsp berry jam (I used strawberry)
6 tbsp citrus or pitted fruit jam (I used apricot)
1 puff pastry sheet (mines Jus Rol)
25g butter (for greasing)
Fresh rosemary & thyme (optional)
Preheat your oven to 200c fan. Unroll your puff pastry sheet and cut into even sized squares that will fit into a muffin tray. If you have any leftover pastry (I did!), you can bake it along side or afterward. Grease your muffin tin with your butter. Then lay each square into a muffin cup. Once your puff pastry is in, add your jam in. I chose to do 6 citrus jam tablespoons and 6 berry, but you can choose to use which ever jam you like🌟Once your jam is in, pop a cube of brie into each pastry cup. You can cut your cubes as you go or pre-cut, just make sure you cut the right amount. I’ve added a very small sprig of rosemary or thyme onto each piece of brie, but this is totally optional! Then just pop into the oven until they are golden on the edges and the cheese has melted. This for me was around 20 minutes, but keep an eye on it. Don’t forget to let them cool just for a minute or two so that you don’t burn yourself like I did trying to take a bite too soon 🙈♥️
