Buckwheat pancakes with English strawberries
Pancakes have been a staple in my household since I can remember, every Saturday growing up, I’d wake up at 7am and run up to the loft to have a quick play with my toys until my dad calmly walked all three flights up to me and said: “gemmie, breakfast is ready” or my mom yelled: “breakfast” from all the way three floors down 🙈

Now that I’m no longer dependent on my dad’s (or @bisquick) pancakes - although some lazy weekends do call for pre-mixed pancake mix and @bisquick is the absolute best - I’ve been concocting my own recipe! 👀

Buckwheat is my favorite flour to mix with, as it gives pancakes a nutty flavor, too - it’s also gluten free incase I’m having and gf friends over then I’ll do 100% buckwheat pancakes 💁🏼♀️

Here’s my British American pancake mix (like me 😆)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1.5 cups Buckwheat flour (can be exchanged with white flour or wheat flour) or do half n half (I like to do this so it’s a little bitta both)
• 2 heaped tbsp of milled nuts & flax mix (mine’s from Sainsbury’s)
• 3.5 tsp Baking powder (for the fluff)
• 2 Eggs
• 1.25 cups almond or any type of milk
• 1 tsp Vanilla
• Generous shake of.. Cinnamon!
(Whisk up and adjust depending on desired thickness)

Heat a pan with a little butter greased and spoon for as big or small as pancakes you like (add two dollops as ears if you want Mickey or Minnie pancakes - this was my fav as a kid). Once there are air bubbles in the pancake (a good amount) then it’s time to flip! 🥞

Douse in maple syrup...AND ENJOY 🍽
