Caprese hassleback tomatoes with mozzarella
Caprese hassleback tomatoes with mozzarella, basil and drizzled generously with pesto!
I saw these on @williamsonoma and realized how easy they would be to make and how fun to serve and had to try it. I highly recommend giving them a whirl and they stay well if you’re making and saving for later or as leftovers! Below is how I made them! Give them a whirl 💫
Ingredients:
4 roma tomatoes, slicing almost through but leaving attached, remove every other slice
2 balls of mozzarella, cut into 1cm slices
1 handful basil leaves (enough to stuff)
4-5 heaping tbsp olive oil
Salt & pepper to taste
Assemble as in photo with tomato, basil, mozzarella in that order and repeat until each tomato is full. Spoon pesto generously and serve on a large plate with spoons for sharing!
