Mussels with Linguine in White Wine Sauce
Mussels and linguine with a white wine butter sauce and a squeeze of lemon! 🍋
You’ll need:
1kg mussels, cleaned
½ cup of white wine (or chicken stock if you don’t want alcohol)
3 tbsp butter
1 thinly sliced shallot
2 cloves garlic, chopped finely
1 small bunch parsley, leaves only
Handful of dried linguine
Pinch of salt
½ lemon
Dash of pasta water (save when draining)
How to:
Add butter, garlic and shallot into a pan, simmer until fragrant (couple of minutes) and then pour in your wine.
Add the clean mussels and simmer with a lid until they have all opened (about 7 minutes).
At the same time, boil a pot of salted water and add in your linguine, cook as instructed on packet and drain.
Add in the pasta, stirring until all mixed together, combining buttery wine sauce with pasta, too, and stir in pasta water if not saucy enough for you.
Toss with parsley and add a squeeze of fresh lemon if you like!
Top tip: go to your local fishmongers over ordering fish online (although this can be done for convenience) but I’ve found that the prices are halved in store in comparison to online. Was going to buy 1kg of mussels at an online fishmonger and it cost £12 with £20 minimum spend for delivery whereas at the fishmonger (I went to @moxonsfreshfish it was about £5 for 1kg!! Also, Waitrose & Partners do fish Friday’s where you can get 20% off at the fish counter, so another good option!
Reminder: Don’t eat any mussels that haven’t open, these are not for consumption and not safe to eat.
