Cheesy Chicken Quesadilla (+ sides)
It’s quesadilla time! Cheesy chicken and sweet corn quesadillas in a crispy tortilla with fresh salsa, smashed avo & sour cream 😍
Ingredients: (serves 2)
2 organic chicken breasts
1 tbsp sunflower oil
3 tsp fajita seasoning (from Sainsbury’s)
2 tsp spreadable butter
1 tin sweetcorn
1 cup grated cheese
1 avocado, smashed
1 small bunch coriander, leaves only
4 tomatoes
1 yellow onion
½ lime, juiced
1 tbsp olive oil
1 garlic clove
2 tortillas
1 large dollop of sour cream for each
Salt and pepper to taste
How to:
Cut the chicken into bite-size pieces and toss in the sunflower oil and the fajita seasoning and then grill in a pan on medium heat until the chicken is fully cooked through.
While chicken cooks, dice your tomato, and onion and place in a bowl with olive oil and lime juice.
Chop your coriander leaves and stir into your salsa mixture. Season with salt and pepper to taste. Place to the side so that the flavours can combine.
Once chicken is cooked, shred with a fork into a bowl and place on the side.
Place your tortilla on a plate and layer half (one side) with cheese, chicken, salsa, then layer again with cheese on top before closing.
Repeat for second tortilla.
Using a butter knife, spread your margarine on top of the folded tortillas.
Using your hand, hold the tortilla onto the plate and flip into a lightly heated pan.
Once in the pan, put on a medium heat and spread the your margarine on the other sides of the tortilla (facing up) so that when you flip, both sides will crisp.
This is essential to get a really lovely crisp quesadilla with a crunch. While the tortilla toasts, slice up another lime, mash your avocado and pop onto your plates with a dollop of sour cream on each, too.
When the quesadilla is fully toasted on one side and cheese starting to melt, flip to melt the cheese and crisp on the other side.
When ready, remove them and slice into 4 pieces and serve while hot and cheese is melting!
This reminds me very much of California, and whenever I make a quesadilla, it makes me miss home a little more — once it’s finished though, that homesickness is forgotten as it’s usually time for a margarita or to have a little food coma nap on the couch!
