Easy, cheesy crispy bacon crustless quiche
Perfect for Monday meal prep, or easy lunch throughout the week, it’s easy, cheesy and delicious.
Ingredients:
5 eggs
1 full cup shredded cheddar cheese
8 strips of streaky bacon, cooked until crispy & chopped
3 spring onions, chopped
2 handfuls spinach, chopped
½ cup plum tomatoes, quartered
125ml cream (I used vegan cream)

Preheat your oven to 180c fan. Whisk eggs together well with cream. Combine everything in a pie or quiche dish (as pictured) or a glass dish if you don’t have ceramic. Stir until everything is evenly distributed and pop into the oven for about 25 minutes or until golden brown and you can stick a knife through cleanly. If still jiggly, continue to bake until your knife comes out clean.
I’ve had two slices today with a little salad and I’m going to save the rest for mine & Josh’s lunches over the next day or two (knowing him it’ll be gone very soon). You can also add a variety of different foods in and take away bacon if you’re making it vegetarian
