Ingredients:
4 sausages (I used HG Walter Butchers pork + leek), remove from casing
1 courgette, chopped
½ onion, chopped
1 ½ tbsp butter
2 cloves garlic, sliced thinly or chopped
6 tbsp finely grated parmesan
1 egg
1 dash olive oil
+ pappardelle (boiled in v salty water)

Simply heat a pan with the butter and garlic, add in your onions, and saute for a few mins until onion are translucent. Then add your sausages (out of the casing), break up with a wooden spatula & cook for a few minutes. Add pasta into boiling water and cook as directed on package (ours was 8 mins) and add courgette into sausage pan. Turn heat off on sausage pan & when pasta is ready, use tongs to pop into sausage pan, add parmesan, egg and olive oil. Stir quickly until combined and serve!
