Honey Halloumi & Avocado Breakfast Toasts
Ingredients: (makes two large toasts or 3 smaller slices)
2 slices of bread (we used 2 large sourdough)
1 halloumi, sliced (1cm thick)
1 large tbsp honey
1 tbsp olive oil
1 avocado, ripe & smashed
½ red onion, chopped
¼ red chilli
1 pinch salt & pepper
1-2 tbsp butter
Pop your olive oil in a frying pan and heat, place your halloumi in the pan and drizzle with honey. Fry until golden and browned/crispy on each side (few mins each side). Toast your bread, and butter while hot. Add your smashed avocado on top generously, season with salt and pepper. Then pile on your halloumi, red onion and chilli (if you like the heat). Dig in while hot!
