Smoky carrot & lentil salad

Whether I’m home or out and about, having a delicious, filling and easy lunch is my go-to always. I’ve been using Klean Kanteen products since I was a kid, and have always had them at home, so I’m excited to be working with them over the next few months to share recipes and more! They recently launched their Stainless Steel food solutions food boxes & canisters. The one in this video is their 34oz (1005ml) which is great for a hearty lunch.

Ingredients:
250g cooked lentils
4 carrots, sliced and roasted at 200c with 1 tbsp olive oil, 1 tsp smoked paprika, 1 tsp cumin & 1 tbsp coconut sugar for 20-30min
2 tbsp dill, torn apart
3 celery stalks, chopped
3 red spring onions, chopped & sliced
1 orange, juiced
1 tbsp olive oil
+ salt and pepper to taste

Simply add all the veg and seasoning together in your lunch box. To make the dressing, juice your orange and add olive oil. You can use as much or as little dressing as you’d like. I used a few tbsp. Save the rest in one of your canisters in the fridge! Shake everything together and enjoy straight away or keep in the fridge for a few days until you are ready to grab and go.
