Easy green pesto pappardelle with pine nuts on top — my pasta pesto craving is satisfied!
One of my favourite British based brands @sophie_allport — who are based just around the corner from where Josh grew up — reached out to me a while ago to collaborate on creating a homemade recipe that is a favourite of mine: dreamy, creamy and delicious basil pesto, made with fresh ingredients at home ❤️ Using a standard semolina pasta recipe for the pasta, the pesto is what makes this dish stand out but is oh so simple to throw together.


You’ll need:
2 cups of fresh basil
½ cup of pine nuts
½ cup of freshly grated parmesan cheese
2 cloves garlic, smashed
½ cup of olive oil
¼ cup of water, incase your blender/food processor needs help getting going

How to: Add all pesto ingredients into your blender or food processor and pulse until all ingredients are thoroughly blended, creating a thick and creamy green pesto. If your ingredients are at first difficult to pulse, feel free to add a dash of water at a time until the blender can pulse to blend the produce.

Try it out on some fresh homemade papardelle or a handful of dried pasta from your cupboard — sometimes some bow ties are all ya need! 💫
