Quick and easy: Red pepper and roasted broccoli pasta
Ingredients: (sauce + broc serves 4)
1 red pepper
1/5 red onion
10-15 cherry tomatoes
250ml cream (I used vegan cream)
1 tsp garlic granules
3 large pinch salt
2 tbsp tomato paste
1 head of broccoli
+ olive oil (and basil optional), cook as much pasta as you need
Preheat oven to 200c fan. Simply add pepper, onion, cherry tomatoes, cream, 2 pinch salt & tomato paste into blender and whiz together until smooth. Either simmer in a pan for 10 minutes until deep orange or cook in your blender (mine has that option). Pop your broc on a tray, cover in garlic, pinch salt, pepper and olive oil, and roast in preheated oven for 8-10 minutes until starting to crisp on the tops. Mix sauce with pasta of choice, serve with broc on top, a little basil (because I like it) and enjoy.
You can also add in garlic to the sauce, too! Feta on top is also nice, or some Parmesan for a cozy foo vibe!
