Tasty snack/brekkie idea: blueberry jam crepes!
Jam:
500g blueberries
120g caster sugar
Splash of water
Squeeze of lemon
Boil until bubbling, then simmer until thickened (20-30min)
Crepe batter:
1 egg
1/3 cup oat milk (or regular)
1/2 tbsp veg oil
1/4 cup plain flour
1 dash of vanilla
Whisk together, spread thin in hot greased pan and cook until golden. Fill with blueberry jam and fold.
Top however you like - I’ve gone bananas (lol) and more blueberry jam with powdered sugar!
