Smashed and roasted baby potatoes with parsley and feta — the summer alternative to the standard Sunday roastie!
Ingredients:
About 20 new potatoes
1 tsp salt
¼ block feta cheese, crumbled
1 small bunch of parsley leaves chopped
Olive oil
Preheat the oven to 200c fan! Boil the potatoes until you can pierce them easily with a fork, drain and dry. Place in a roasting tin or on a baking tray and press down on each one gently with a fork until about 1cm tall and pour olive oil generously over, making sure to properly coat all of the nooks and crannies, this is the secret to really crispy edges! Put them in the oven for about 40-45 mins and flip halfway through. Once ready, sprinkle salt, parsley and feta to serve!
